How to Cook for just one or two?

A reality in the lives of many people is cooking for only 1 or 2 people. It is very possible to cook varied and nutritious meals for only a few. It does take some planning. There are a lot of helpful tips out there which will make it easier.

One basic decision is—leftovers. Some love them, some hate them. Many people don’t mind having the same breakfast or lunch or dinner several days in a row, but most would like to see at least some variation, especially in dinners. One way is to disguise the second night’s dinner with different spices, presentation or use the same basic elements in different ways. For example, one Rotisserie Chicken could be served as roasted chicken quarters the first night, with asparagus, then half the remaining chicken meat could be made into chicken fried rice with broccoli the next night, and all put into a chicken rice soup the third night.

If you don’t like to have chicken three nights in a row, freeze the meat and use it later in a chicken casserole or soup. 

In the summer time, a good arranged salad plate could be the perfect solution for lunch or dinner for two, and a tasty way to use up small quantities of meats, cheeses, veggies etc.

Planning is the key and the freezer is your best friend. Just remember that nothing lasts forever, frozen cooked chicken usually lasts only 2-3 months under average conditions, longer if you have a vacuum freezing system.
