It’s estimated a quarter of the world’s population eats insects pretty routinely, but the vast majority of Americans are not among the aficionados.

That may be slowly changing. There are now about 200 restaurants across the country that feature insects on the menu — from grubs to caterpillars to crickets. They’re following the lead of some of the most innovative and respected restaurants in the world, like Noma in Copenhagen and London’s Archipelago.

You can find online recipes for quiche with earthworms and parmesan fritters stuffed with June bugs, but where can you get the necessary ingredients?

In the United States, Edible Insects is an online company that offers a swarm of products, including a 10-flavor cricket test pack. At his Oyamel restaurant in Washington, D.C., renowned chef José Andrés sprinkles a type of Mexican grasshopper known as chapulines over his tortillas. And if you're looking to encourage your child to eat bugs, Crunchy Critters has trail mix and snack bags designed to appeal to kids. They will certainly impress everyone on the playground.

Eating insects is not only a good source of protein, they're also good for the planet. The Journal of the Institute of Food Science & Technology says insects produce about 600 times less greenhouse gases than farm-raised beef.

Despite the proliferation of insect consumption, few American mainstream stores sell insects for cooking or stock insect-based food products, such as cricket ground flour. Of course, it is possible to forage in your own backyard, where insects are free for the taking. But experts recommend you bone up on Insects 101 to ensure you’re not picking up leggy creatures that could make you sick, or taste terrible no matter how much hot sauce you add to the recipe.
