Sabin, Smith team up to create hands-on cooking class - Port Clinton News Herald


Eating only what's in season is 'old-school medicine'

Rose Sabin’s sold-out cooking classes will have the capacity to accept more students as well as provide an enriched experience thanks to a collaboration with Donna Smith, co-owner of Gideon Owen Wine Co. and QuinStock Farms.

In the past, Sabin was forced to turn students away from Ayurvedic Interactive Seminar and Cooking Classes, which were held inside her business, Root to Rise Wellness Café. The fall class, “Longevity Kitchen, a Celebration of the Blue Zones,” will be held inside the larger venue of Gideon Owen on Sept. 22, 6:30-9 p.m.

Longevity Kitchen will highlight the diet and lifestyle of the Blue Zones, five areas around the world where populations average lifespans of near 100 years old. They are Icaria, Greece; Oglistra, Sardinia; Okinawa, Japan; Nicoya, Costa Rica; and Loma Linda, California.

Common themes in the Blue Zone, and hands-on class to 'empower' students

“We’ll discuss and break down the Blue Zones and eight common themes among them,” Sabin said. “In all five regions, they have a glass of wine every day, and we’ll talk about why that’s important.”

Because Gideon Owen will provide greater space for the seminar, students will sit at hands-on stations and prepare a dish from each region. Each dish will be paired with its own wine, most of which will come from Gideon Owen Winery.

“When we held the classes at Root to Rise, there was just one person cooking and everyone watched,” Sabin said. “People loved it, but the hands-on class empowers the person taking the class.”

All of Sabin’s cooking classes are based on the Ayurvedic philosophy of creating a diet based on seasonal foods.

“Ayurvedic is the sister science to yoga. You eat in line with the seasons. It’s old-school medicine that teaches you to eat herbs and only what’s in season,” Sabin said.

Focus on the connection between food and health

Sabin is passionate about educating her customers about the connection between food and health.

“If you just go back to nature, you will heal yourself,” Sabin said. “We want to get people to be more mindful of what they put in their mouth.”

The Longevity Kitchen seminar will show students how easy it is to be creative with an Ayurvedic and Blue Zone diet as Sabin presents recipes based of in-season produce from Smith’s QuinStock Farms.

“It will depend on where the farm is at that time. Our main emphasis on the farm is fruit, but we do grow a large vegetable garden,” Smith said. “We may use eggplant, squash, or apples. That being said, it’s a farmer’s life, so you never know.”

In addition to being a farmer and a restauranteur, Smith is a botanist.

As Sabin and Smith combine their experience and expertise for the first of their collaborative classes, they plan to bring an enriching educational experience to the students.

“We’re two women running this. All of the cooking classes I’ve been to, even in Italy, were run by men,” Sabin said. “It’s notable that it’s two women leading a pretty cool cooking class.”

Through the collaboration, the women are enriching the community and supplementing each other’s passions and businesses.

“This is a new venture, and we’re excited about it,” Smith said. “We love to support Rose.”

Cost for the Longevity Kitchen class is $95, which includes the cooking class, dinner, five wine pairings, coffee, tea, dessert, a recipe booklet and a Gideon Owen keepsake wine glass.
