These little guys pack a big punch! If you have a sweet tooth like me, but are looking to cut your sugar intake, this is the recipe for you! Enjoy one, two or three as a pre-workout snack, pick-me-up or after-dinner treat.

Makes 16 bites

1 cup Raw Walnuts* 

1 cup Raw Macadamia Nuts* 

1 Tbsp Coconut Oil

1 cup (about 10-12) Medjool Dates

1/4 tsp Pink/Celtic Sea Salt

1/4 cup Unsweetened Shredded Coconut, plus more for rolling (optional)

1/4 cup Blueberries

Preheat the oven to 350°F. Place the nuts on a small baking sheet and toast for 7-10 minutes, tossing once or twice. Add the coconut oil during the last two minutes of toasting to melt the oil. Toss the nuts and oil once more, then transfer to a food processor. Allow to cool.

Stem, pit and tear the dates in two and add to the food processor (Note: I like to do this while the nuts are cooling). Add the salt. Process for 30 seconds.

Scrape down the sides of the bowl, add the coconut and process for another 1-2 minutes, or until the mixture comes together and you can easily squish it together with your fingers. Remove the blade and add the blueberries.

Slightly dampen your hands with warm water, grab about 1 Tablespoon size portion, then gently squish and roll the mix into a 1-inch ball. Place in a glass storage container and continue with the rest of the mix.

If desired, roll the balls in extra shredded coconut or simply sprinkle a bunch on top. Store in the fridge for up to 1 week.

Note: Some of the blueberries will burst upon rolling. If anyone has any luck finding dried blueberries in the grocery store or online, those can work, too! Please let me know if you do! Also, by the time you are done rolling, your hands will be covered in all those natural nut and coconut oils - yum!

* I love the flavor combo of walnuts and macadamia nuts, but these can be a bit pricy (especially macadamias). Use an equal amount of your favorite nuts or whatever you have on hand - almonds and cashews would be incredible.
