A top chef says we’ve all been cooking sausages wrong all this time - he shared his tips on the perfect way to cook sausages.

The chef has said that there are a few secrets to cooking a sausage and revealed that most people make three mistakes when cooking. Jeff Baker who has cooked for the musical sensation Queen has previously advised cooking fans on how to cook bacon properly because everyone was cooking that wrong too.

The award-winning Michelin-starred chef has revealed how to get the perfect bangers in a methodical five easy steps. Too many cooks in the kitchen can spoil the broth that’s why listening to Jess, with three decades of experience in a professional kitchen is the way to go.

Jeff has worked with some of the best in the culinary industry and knows what he is talking about and now he’s willing to share his secrets with us all. The Executive Development Chef now works at Farmison & Co and has shared his secrets and warned of the common errors....

1. Let the sausage chill 20 minutes before cooking

It’s important not to go straight from the fridge to the pan, there needs to be a 20-minute resting period, which will help the sausage cook evenly. It will also prevent the skin from splitting when it hits the heat of the pan

2. Pop your bangers in the pan

Use a heavy non-stick frying pan, and place on low to medium heat.

3. Add a teaspoon of duck or goose fat to the pan

Then swirl around until the base is fully coated then tip away any excess fat.

4. Sausages should not be touching and should be kept on a constant heat

Turning them regularly ensures the bangers get a rich golden colour, for a traditional sausage this process should take around 10-12 mins.

5. Rest the bangers before serving

A cooked sausage should have a temperature of 70°C, it should also be firm to touch. As difficult as it may be, the secret here is to let the sausage rest for a few minutes. Just like you’d let a steak rest to let the meat relax, doing this with your sausage will allow you to have tender juicy sausages.

Adjusting your cooking methods can be bothersome, but Jeff is the best in the business so he knows what he is talking about.

Mistakes people make when cooking sausages

1. Pricking the skins when cooking quality sausages with high meat content and natural skins

This can cause juices will run out and you'll end up with a dry tasteless sausage.

2. Never deep fry

Doing so can make the skin tough and the sausage dry.

3. Don't be a silly sausage and expect results to be the same between baking and frying

Trying to be healthy will impact the quality, baking your sausage won’t give you the fry-up experience pan cooking does. Baking prevents the exterior from developing that lovely umami taste we all crave.

Jeff has also revealed when it comes to cooking curry he believes that to make the most of our spices, we should instead 'temper' them in a pan.

Speaking to the Daily Star, Food and Wine Culinary Director Justin Chapple says this is the secret to cooking the perfect roast. "When you cover your turkey with mayonnaise, it bastes it during the roasting process, keeping the meat moist and tender.”
