- Step 1Bring a large pan of salted water to the boil and cook the squash for 10min, or until tender. Using a slotted spoon (reserving water for cooking gnocchi), transfer the squash to a blender.
- Step 2Bring the cooking water back up to the boil, if needed. Add the gnocchi and cook according to pack instructions. Drain, reserving a mugful of the starchy cooking water.
- Step 3Add 125ml reserved cooking water to the blender, together with plenty of seasoning. Whizz until smooth.
- Step 4Return the gnocchi to the empty pan and add the sauce and spinach. Cook over medium heat, stirring, until the spinach wilts, adding a little more reserved cooking water to loosen, if needed. Check seasoning.
- Step 5Divide between 4 bowls and sprinkle over the feta and seeds. Serve.
