Philip and Linda Fekula hit up opening day of the Easton Farmers’ Market 11th Winter Market on Saturday for some Swiss chard for his special recipe.

Back home in Bethlehem Township, he’ll sauté the stems first in butter and fresh lemon then add in the leaves rolled up, with some more lemon and maybe a little garlic.

Stephen Mitzak said he and his fraternal twin brother, Keith, grow the greens aquaponically at their AquaSprout Farms in Branchburg, New Jersey, using filtered water from a tank of fish fed non-GMO feed. The water is recycled back to the fish tank, using 92% less water and 90% less energy per square foot than traditional agriculture, he said.

Allyson Snik, of Bethlehem, swung through the open-air market in Easton’s 300 block of Northampton Street for a variety of mushrooms to sauté in butter with fresh thyme, which she then adds to pappardelle pasta and tops it all with parmesan cheese, red pepper flakes and parsley. She pointed to the ones she wanted from Primordia Mushrooms, of Lenhartsville, and Elizabeth Beller used her gloved hands to bag them up.

“It truly does feel like the first winter market,” Emily Roland said as she manned the stand of Mertztown-based Funny Farm Apiaries, heated insoles in her boots. “We’re here with toe warmers.”

Parkas and hoods were the fashion, along with steaming cups of coffee from Roastwell Coffee Roasters in Ringoes, New Jersey, during the seasonably chilly start to the Winter Market.

It continues 10 a.m. to noon Saturdays through April 29, with the block of Northampton Street that is also home to Easton Public Market closed to traffic for vendors to set up in the street. The Easton Farmers’ Market is the nation’s oldest, continuously operating open-air market, established in 1752.

The market’s full list of vendors for the winter edition, according to the nonprofit Greater Easton Development Partnership that operates it, is as follows:

  • Apple Ridge Farm: Sourdough bread, baked goods, pot pies, pastured pork, bone broth, winter soups and more.
  • AquaSprout Farm (every other Saturday): Aquaponically grown butterhead lettuce, summer crisp lettuce, baby romaine, curly kale, Swiss chard, cherry tomatoes, basil, arugula and micro greens.
  • Breakaway Farms: Pasture-raised beef, pork, chicken, eggs, sausages and more than 50 varieties of bacon.
  • Cabbage Throw Farm: Organically grown greens, herbs and root veggies.
  • Easton Salsa Co.: Gourmet, handcrafted salsas and hot sauces.
  • Flour Shop Bakery: Breads, pastries, cookies and savory crostini.
  • Funny Farms Apiaries (every other Saturday): Local honey and handmade products.
  • Jersey Pickle: Pickles, olives and other fermented treats.
  • Maddie’s Strudel Haus: Homemade, authentic Hungarian strudel filled with sweet, savory fillings made from scratch.
  • Mia & Maddie’s Bakery (every other Saturday): Custom cakes and baked goods made from scratch with unique international flavors.
  • Portch Tea: Small-batch kombucha, hard kombucha, hot yerba maté and mulled cider.
  • Primordia Mushroom Farm: Fresh mushrooms.
  • River Valley Community Grains: Flours, grains, granola, crackers and more with a focus on regenerative agricultural methods.
  • Roastwell Coffee Roasters: Barrel-aged coffees, bagged coffees, hot coffee and tea.
  • Salvaterra’s Gardens: Organically grown greens, root veggies.
  • Scholl Orchards: Apples, pears, root veggies, winter squash, jarred butters, vinegar, hot sauce, pasta and ketchup.
  • Silverback Distillery: The only mother-daughter distilling duo in the nation crafting high quality, award-winning spirits including gin, rye whiskey and bourbon.
  • Zekraft: Prepared salads, soups, jarred desserts and granola.

The Winter Market offers a Winter Warrior rewards program for shoppers who check in at the InfoTent each week, to earn a gift for every six consecutive weeks attended.
