’Cooking with Carol’ expands its footprint - Pekin Daily Times

MACKINAW — Carol Haynes began doing a weekly live online cooking class from her home in April because of her passion for cooking and need to keep her Mackinaw restaurant/bar afloat in the early days of the COVID-19 pandemic.

She wasn't sure if she would keep "Cooking with Carol" going when in-person dining and drinking was allowed again by the state.

She's not only keeping it going. She's expanded the hour-long class footprint by adding three more locations besides Haynes on Main, 108 S. Main St., to pick up ingredients for her recipes.

"People wanted me to keep doing the class and I love doing it. It's one of the best things I've ever done," Haynes said. "It's so rewarding seeing people who felt insecure in the kitchen cooking meals, and seeing kids cook meals.

"With things opening up, people don't have as much time on their hands so I thought I should look for other locations in the area where people can pick up ingredients for my class. Hopefully, those businesses will get a boost from more customer traffic."

Cooking with Carol recipe ingredients are now available at three other locations:

* Musselman Meats, 654 W. Jackson St., Morton.

* Olio & Vino, 4603 N. Prospect Road, Peoria Heights.

* Lil Beaver Brewery, 5 Finance Drive, Bloomington.

"That's it for now," Haynes said. "I'm busy enough."

About 90 recipe kits, the most in the class' history, were sold the past two weeks, with Musselman Meats and Lil Beaver Brewery on board. This is the first week for Olio & Vino. About 90 kits had been sold through Saturday.

The class is presented at 5:30 p.m. Tuesdays on Facebook Live on the Cooking with Carol Facebook page.

This week's recipe is for cashew chicken over ginger-infused jasmine rice ($40, serves four to six). The weekly cocktail recipe is for a watermelon cooler with fresh watermelon puree, mint, simple syrup and vodka. (four drinks for $18).

A virtual kit, which includes the recipe and a list of ingredients, is available for $8.

Haynes owns Haynes on Main with her husband Patrick, who is behind the camera for Cooking with Carol.

The business has been open since 2012. It was the first bar to open in Mackinaw in at least 80 years after voters and the Village Board decided in 2012 to allow alcohol sales in the village.
