The big Thanksgiving Day meal is all but a memory.

By this time, you’ve packed leftovers, including turkey, in the refrigerator to sustain you through Black Friday shopping and holiday decorating. Perhaps, you’ve already eaten a few turkey sandwiches.

Unfortunately, there’s an expiration date on how long you can eat leftovers before they spoil.

“The truth is when food isn’t handled, stored, and reheated safely, food can cause anyone to get sick from a foodborne illness,” according to Penn State Extension.

The educational organization warns senior citizens and children under the age of 7 are the most susceptible to becoming seriously ill if they get sick from a foodborne illness.

The basic rule of thumb to eat or freeze leftovers is three to four days, before the risk of food poisoning increases.

The U.S. Department of Agriculture recommends using the Monday after Thanksgiving as the cutoff to safely eat those holiday leftovers, adding “after four days, spoilage bacteria can cause food to develop a bad smell or taste.”

To eliminate spoilage, the UDSA suggests packaging food into shallow, well-sealed containers within two hours after food is prepared. In addition, it says food should be reheated to an internal temperature of at least 165 degrees Fahrenheit.
