Sometimes Aunt Jemima mix will get the job done. But for me, during this time of year — when the leaves turn fiery and the air starts to cool — there is only one choice: a comforting stack of pumpkin pancakes.

The secret ingredient, ricotta, lends these pumpkin pancakes an extra luxurious texture, while a hint of pumpkin spice gives the batter extra depth and warmth. They're sweetened with maple syrup, an iconic pairing with pumpkin that will give you major fall vibes when you inevitably cave and sneak a taste of the batter.
